I have been putting our new reusable Linen Produce Bags to good use in the kitchen this week. This is the recipe that my daughter Phoebe uses, and a favourite of all of ours. When making any variation of hummus, you can add extra bits to it to spice it up or take them away if you prefer.
I often add roasted red peppers chopped up to make a red pepper hummus or caramelised onions to make a tasty variation.
Phoebe's Yummy Hummus Recipe
Ingredients:
- 2 tins of chickpeas or use dried, soak and cooked equivalent
- 1 garlic clove
- 2 tablespoons of light tahini
- 1 teaspoon Cornish Sea Salt
- Juice of half a lemon
- 1 teaspoon of harissa
- Splash of olive oil
Method:
- Drain the chick peas saving two tablespoons of chick pea water.
- Add the chick peas and the saved water to a food processor.
- Pop in the remaining ingredients and whizz until fine.
- Adjust seasoning as required.
The hummus should be stored in the fridge, it’ll keep for a day or two if you don’t eat it all in a flash!
